You never need to wait for a special occasion to toast good friends. And sometimes a Tuesday night drink with the girls after work is as good a reason as any. If beer nuts and Budweiser is not what you are looking for though, I have some other ideas.
How does a nice cheese plate sound? No weeknight cooking required to share a drink. A nice cheese plate with a few different types is a great little snack, and easy to pull together. Now, of course you can always pair cheese with wine but to change it up and add a little fun how bought serving Mimosas and Bellinis.
And just like the cheese plate no recipes required here either. Or at least I would recommend going more casual and recipe free and making them more to individual tastes.
Fill any glass of your choosing, champagne flutes not required, anywhere from 1/3 – 2/3 full with champagne and then top off with orange juice. If you want to kick it up a notch you can add a little mandarin vodka, but I’m not sure there’s any reason to mess with a classic.

I know very little about champagne, in fact with the exception of Almond Champagne, (which I’ll save for another post), I don’t even like champagne unless it’s mixed with something like orange juice. So here is all I’m going to say about the right kind of champagne for a mimosa or bellini; make it cheap! If you are going to be adding something to it anyhow, and you are not a champagne connoisseur, (in which case you’re probably not adding anything to it), I would say it probably doesn’t matter. In honor of my Aunt Lorraine though, I am going to recommend Andre Champagne!
